Malaysian tulang broth


Malaysian tulang broth, a local Mamak (Tamil Muslim) dish of mutton or beef leg bones stewed in a spicy sauce. Its flavors are complex as the broth is made with many spices and ingredients such as carrots, cinnamon, , onions, potatoes, cardamom and black pepper. However, the essential ingredient that ultimately makes a tulang broth is bone marrow. The bones don't have much meat on them, but the meat isn't the point, it's the marrow inside.

It's a tasty and nutritious food, but is also quite obscene - imagine the sounds you make when sucking marrow out of a big bone in a public place...
