Pork Sisig

Sisig (Kapampangan, Philippines) literally means to make a salad made with vinegar, chili and salt.

It also refers to a method of preparing pork or seafood which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices.

Pork sisig is composed of chopped pigs face (snout included) and ears with a generous amounts of chicken liver, whereby seafood sisig is made of squid, tuna and milkfish.
